Chocolate Mousse Base

Melt Dark Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler method) until smooth. Remove from heat and let it cool slightly.

Prepare Gelatin
In a small bowl, combine gelatin powder with water. Let it sit for about 5 minutes until it blooms.

Whisk Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until pale and creamy.

Add the melted dark chocolate to the egg yolk mixture and stir until well combined. Then, heat the bloomed gelatin until dissolved and add it to the mixture.

In a large mixing bowl, whip the cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.
