Method

Chocolate Mousse Base

  1. 1

    Melt Dark Chocolate

In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler method) until smooth. Remove from heat and let it cool slightly.

  2. 2

    Prepare Gelatin

In a small bowl, combine gelatin powder with water. Let it sit for about 5 minutes until it blooms.

  3. 3

    Whisk Egg Yolks and Sugar

In a separate bowl, whisk together the egg yolks and granulated sugar until pale and creamy.

  4. 4

    Combine Mixtures

Add the melted dark chocolate to the egg yolk mixture and stir until well combined. Then, heat the bloomed gelatin until dissolved and add it to the mixture.

  5. 5

    Whip Cream

In a large mixing bowl, whip the cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.

  6. 6

    Set Mousse

Divide the mousse mixture into serving glasses or a large mold, and refrigerate for at least 1 hour until set.

Milk Chocolate Mousse Layer

  1. 7

    Melt Milk Chocolate

In a heatproof bowl, melt the milk chocolate using the double boiler method until smooth. Let it cool slightly.

  2. 8

    Prepare Gelatin

Bloom the gelatin in the same way as the dark chocolate layer.

  3. 9

    Whisk Egg Yolks and Sugar

In another bowl, whisk together the egg yolks and sugar until pale and creamy.

  4. 10

    Combine Mixtures

Add the melted milk chocolate to the egg yolk mixture, and stir to combine. Then add the dissolved gelatin.

  5. 11

    Whip Cream

Whip the cream until soft peaks form and gently fold into the milk chocolate mixture.

  6. 12

    Set Mousse

Pour the milk chocolate mousse on top of the dark chocolate mousse in the serving glasses/mold and refrigerate for at least 1 hour until set.

White Chocolate Mousse Layer

  1. 13

    Melt White Chocolate

In a heatproof bowl, melt the white chocolate using the double boiler method until smooth. Let it cool slightly.

  2. 14

    Prepare Gelatin

Bloom the gelatin as previously done.

  3. 15

    Whisk Egg Yolks and Sugar

In a separate bowl, whisk the egg yolks and sugar until pale and creamy.

  4. 16

    Combine Mixtures

Add the melted white chocolate to the egg yolk mixture and stir well. Then add the dissolved gelatin.
