    In a large mixing bowl, combine buckwheat flour, cornmeal, ground flaxseed, baking powder, and salt. Whisk until well combined.

    Mix Wet Ingredients

    In a separate bowl, combine almond milk, maple syrup, vegetable oil, and vanilla extract. Whisk until smooth.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix. The batter should be slightly lumpy.

    Rest the Batter

    Let the batter sit for about 5-10 minutes to allow the flaxseed to absorb moisture and thicken the batter.

Cooking

    Preheat the Pan

    Heat a non-stick skillet or griddle over medium heat. Lightly grease with a small amount of oil.

    Cook the Pancakes

    Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
