Preparation of Tofu

    Press Tofu

    Wrap the firm tofu in a clean kitchen towel and place a heavy object on top to press out excess water. Let it sit for about 15 minutes.

    Cut Tofu

    Once pressed, cut the tofu into bite-sized cubes.

    Marinate Tofu

    In a bowl, combine soy sauce, garlic powder, and ground ginger. Add the tofu cubes and let them marinate for at least 10 minutes.

    Coat Tofu

    Sprinkle cornstarch over the marinated tofu and toss to coat evenly.

Vegetable Preparation

    Chop Vegetables

    Dice the bell pepper and zucchini into bite-sized pieces. Trim the ends of the snap peas, and slice the green onions, keeping the white and green parts separate.

Cooking

    Cook Tofu

    In a large skillet or wok, heat vegetable oil over medium-high heat. Add the coated tofu and sauté until golden and crispy, about 5-7 minutes. Remove tofu and set aside.

    Stir-fry Vegetables

    In the same skillet, add the white parts of the green onions, bell pepper, zucchini, and snap peas. Stir-fry for about 4-5 minutes until the vegetables are tender but still crisp.

    Stir in coconut milk, red curry paste, lime juice, and brown sugar. Mix well and bring to a simmer.

    Combine Tofu and Sauce

    Add the crispy tofu back into the skillet, tossing to coat in the sauce. Cook for an additional 2-3 minutes until everything is heated through.

    Remove from heat, garnish with the green parts of the green onions, and serve hot over rice or noodles.
