Sausage Preparation

    Make the Sausage Mixture

    In a large mixing bowl, combine ground pork, paprika, cayenne pepper, garlic powder, onion powder, black pepper, salt, and chopped parsley. Mix well until fully combined.

    Cook the Sausage

    Heat a skillet over medium heat and add olive oil. Once hot, add the sausage mixture, breaking it apart with a spatula. Cook for about 10-12 minutes or until browned and cooked through. Drain excess fat if necessary.

Main Dish Assembly

    Combine with Tomatoes

    Add the canned diced tomatoes (with juice) to the skillet with the cooked sausage. Stir well and let it simmer for about 5 minutes to allow the flavors to meld.

    Add Cheese

    Sprinkle the shredded cheese over the mixture in the skillet. Cover and let sit for 3-5 minutes or until the cheese is melted.

Serving

    Plate the Dish

    Spoon the sausage and tomato mixture onto plates. Top each serving with a generous dollop of sour cream and a spoonful of salsa.
