    Prepare the Salmon

    Cut the fresh Atlantic salmon into small bite-sized pieces and season with a pinch of salt and pepper. Set aside.

    Chop the Onion

    Peel the onion and chop it finely.

    Prepare the Spinach

    Rinse the fresh spinach under cold water and pat dry. Roughly chop if the leaves are large.

    Beat the Eggs

    In a bowl, crack the eggs and whisk them together until well combined. Season with salt and pepper.

Cooking

    Caramelize the Onion

    In a large non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 5-7 minutes, stirring occasionally, until the onions are soft and caramelized.

    Cook the Salmon

    Add the salmon pieces to the skillet with the caramelized onions. Cook for an additional 3-4 minutes, stirring gently until the salmon is just cooked through.

    Add Spinach

    Stir in the chopped spinach and cook for another 1-2 minutes until the spinach wilts.

    Combine with Eggs

    Pour the whisked eggs over the salmon, onion, and spinach mixture. Gently stir to combine and cook for about 3-4 minutes, or until the eggs are set to your liking.

    Add Cream Cheese

    Once the eggs are nearly done, add the cream cheese in dollops and stir gently until it melts and incorporates into the scramble.
