    Start by finely dicing the onion and chopping the fresh spinach. Cut the salmon into small bite-sized pieces.

    In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sprinkle with a pinch of salt. Cook for about 10-15 minutes, stirring occasionally, until the onions are soft, translucent, and caramelized.

    Once the onions are caramelized, add the salmon pieces to the skillet. Cook for 3-4 minutes until the salmon is opaque and cooked through, stirring gently to avoid breaking the pieces.
