Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Combine Wet Ingredients
In a separate bowl, whisk together the milk, egg, melted unsalted butter (if using), and vanilla extract until smooth.

Combine Mixtures
Pour the wet ingredients into the dry ingredients. Gently stir until just combined; be careful not to overmix. The batter should be slightly lumpy.

Heat the Pan
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil, if desired.

Cook Pancakes
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.

Repeat with the remaining batter, greasing the skillet as necessary, until all pancakes are cooked.
