Walleye Preparation

    Season the Walleye

    Pat the walleye fillets dry with a paper towel. Season both sides with salt and black pepper.

    Sauté the Almonds

    In a large skillet over medium heat, melt 2 tablespoons of butter. Add the sliced almonds and sauté until golden brown, about 3-4 minutes. Remove from the skillet and set aside.

    Cook the Walleye

    In the same skillet, add the remaining butter and heat until melted. Place the seasoned walleye fillets in the skillet and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

    Add Garlic and Lemon

    During the last minute of cooking, add minced garlic and lemon juice to the skillet, spooning the mixture over the fish.

    Finish with Almonds

    Once the walleye is cooked, sprinkle the sautéed almonds over the top before serving.

Grilled Vegetables Preparation

    Prepare the Vegetables

    In a bowl, combine sliced zucchini, bell peppers, and red onion. Drizzle with olive oil, salt, and black pepper, tossing to coat evenly.

    Grill the Vegetables

    Preheat a grill or grill pan over medium-high heat. Place the vegetable mixture on the grill and cook for 8-10 minutes, turning occasionally until they are tender and have grill marks.

Mashed Potatoes or Rice Preparation

    Cook the Potatoes

    Bring a large pot of salted water to a boil. Add the cubed potatoes and cook for 15-20 minutes, or until tender. Drain and return to the pot.

    Mash the Potatoes

    Add butter, milk, and salt to the drained potatoes. Mash until smooth and creamy.

    Cook the Rice (if chosen)

    In a saucepan, bring water to a boil. Add the rice, reduce heat to low, cover, and cook for 18-20 minutes, or until the rice is tender and water is absorbed.
