Method

Preparing the Walleye

    Coat the Walleye

    Start by seasoning the walleye fillets with salt and black pepper on both sides. Dredge each fillet in flour, shaking off any excess.

    Prepare Egg Wash

    In a bowl, beat the eggs until well combined. Dip each floured fillet into the egg wash, ensuring it's fully coated.

    Crust the Fillets

    Press the egg-coated fillets into the chopped almonds, ensuring an even coating on both sides.

    Pan Roast the Walleye

    In a large skillet, heat olive oil over medium heat. Once hot, add the almond-crusted walleye fillets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from heat and keep warm.

Grilling the Vegetables

    Prepare Vegetables

    In a bowl, combine the sliced zucchini, bell peppers, and red onion. Drizzle with olive oil, salt, and black pepper. Toss to coat evenly.

    Preheat a grill or grill pan over medium heat. Add the vegetables in a single layer and grill for about 5-7 minutes, turning occasionally, until they are tender and slightly charred. Remove from heat.

Making Mashed Potatoes or Rice

    In a large pot, add the cubed potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot.

    Add butter, milk, salt, and black pepper to the drained potatoes. Mash until smooth and creamy. Adjust seasoning if necessary.
