    Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the mixture resembles wet sand.

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8-10 minutes or until lightly golden. Remove from oven and allow to cool.

Cheesecake Filling

    Mix the Filling

    In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add the granulated sugar and mix until well combined.

    Add sour cream, vanilla extract, and cornstarch to the mixture. Beat on low speed until just combined. Add the eggs one at a time, mixing on low speed after each addition until fully incorporated.

    Pour the cheesecake filling over the cooled crust. Bake in the oven at 325°F (160°C) for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake in the oven for 1 hour.
