Lamb Chops

    Prepare the Marinade

    In a bowl, mix together olive oil, minced garlic, chopped rosemary, salt, and black pepper.

    Marinate the Lamb

    Rub the marinade all over the lamb chops and let them marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.

    Cook the Lamb Chops

    Preheat a grill or skillet over medium-high heat. Cook the lamb chops for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Sauté Shallots

    In a saucepan, add the chopped shallots and a little olive oil over medium heat. Sauté until they become translucent.

    Combine Ingredients

    Add the beef stock, red wine, bay leaves, and fresh thyme to the saucepan with the sautéed shallots.

    Reduce the Sauce

    Bring to a simmer and reduce the mixture by half, stirring occasionally. This should take about 20-25 minutes.

    Finish the Demiglace

    Remove the bay leaves, then whisk in the butter until melted and the sauce is smooth.

Mashed Potatoes

    Cook the Potatoes

    Place the cubed potatoes in a large pot and cover with cold water. Add salt and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth and creamy.

    Season the Mashed Potatoes

    Add salt and black pepper to taste, mixing well.
