Lamb Chops

    Prepare the Marinade

    In a bowl, mix olive oil, minced garlic, chopped fresh rosemary, salt, and black pepper to create a marinade.

    Marinate the Lamb

    Coat the lamb chops with the marinade and let them sit for at least 30 minutes, or up to overnight in the refrigerator.

    Cook the Lamb Chops

    Preheat a grill or skillet over medium-high heat. Cook the lamb chops for about 4-5 minutes on each side for medium-rare, or until desired doneness.

Mashed Potatoes

    Prepare the Potatoes

    Peel and cut the potatoes into chunks. Place them in a large pot and cover with cold water. Add a pinch of salt.

    Boil the Potatoes

    Bring the pot to a boil over high heat, then reduce to a simmer. Cook the potatoes for about 15-20 minutes, or until tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

    In a saucepan, combine beef stock, red wine, chopped onion, chopped carrot, chopped celery, bay leaf, and black peppercorns.

    Bring the mixture to a boil, then reduce to a simmer. Cook for about 30-40 minutes until reduced by half.

    Thicken the Sauce

    In a small bowl, mix cornstarch with water to make a slurry. Stir this into the sauce and cook for an additional 5-10 minutes until thickened.
