Preparing the Hash Browns

Cook the Vegetables
In a large skillet over medium heat, add a splash of oil and sauté the diced green bell pepper, onion, and mushrooms until softened, about 5-7 minutes.

Add Hash Browns
Add the frozen hash browns to the skillet with the sautéed vegetables. Cook for an additional 10-12 minutes, stirring occasionally, until the hash browns are golden brown and crispy.

Add Cheese
Sprinkle the shredded cheese over the hash brown mixture and cover the skillet. Cook for another 2-3 minutes, until the cheese is melted.
Making Moe's Special Hollandaise Sauce

Prepare the Double Boiler
Fill a small saucepan with about an inch of water and bring it to a simmer. Place a heatproof bowl on top of the saucepan, ensuring it doesn’t touch the water.

Add Butter
Slowly drizzle in the melted butter while continuously whisking until the sauce is thick and creamy. This should take about 5 minutes.

Season the Sauce
Whisk in the Dijon mustard, salt, and cayenne pepper until well combined. Remove from heat and set aside.
Preparing the Toast

Toast the Bread
While the hash browns and sauce are cooking, toast the slices of bread in a toaster until golden brown.

Spread Butter
After toasting, spread butter on each slice of toast while warm.
Serving

Plate the Dish
Serve the hash browns on a plate, drizzle with Moe's special Hollandaise sauce, and serve with the buttered toast on the side.
