Hummus Preparation

Prepare the garbanzo beans
If using canned garbanzo beans, drain and rinse them thoroughly under cold water. If using dried beans, soak them overnight and then cook until tender.

Blend the ingredients
In a food processor, combine the garbanzo beans, tahini, roasted garlic, olive oil, lemon juice, cumin, salt, and water. Blend until smooth, scraping down the sides as necessary.

Adjust consistency and seasoning
If the hummus is too thick, add a little more water, one tablespoon at a time, until the desired consistency is reached. Taste and adjust seasoning if necessary.

Serve the hummus
Transfer the hummus to a serving bowl. Drizzle with additional olive oil and sprinkle with paprika or parsley if desired. Serve with pita bread and fresh vegetables.
