Cooking the Hashbrowns

Prepare the Hashbrowns
In a skillet over medium heat, add a small amount of oil. Once hot, add the hashbrowns and cook until golden brown and crispy, about 5-7 minutes. Stir occasionally to cook evenly.

Warm the Tortillas
In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Heat the Black Beans
In a small saucepan, heat the black beans over medium heat until warmed through, about 3-5 minutes.
Assembling the Dish

Assemble the Huevos Rancheros
On each warm tortilla, layer some of the black beans, followed by a crispy hashbrown, and top with a fried egg. Spoon salsa verde over the top and add a dollop of sour cream.

If desired, garnish with chopped cilantro, avocado slices, and serve with lime wedges on the side.
