Caramelize the Onion
Slice the onion thinly. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the onion and a pinch of salt, and cook, stirring occasionally, until the onion is golden brown and caramelized, about 10-15 minutes. Remove from the skillet and set aside.

Shred the Corned Beef
Using a fork or your hands, shred the corned beef into bite-sized pieces.
Cooking the Hash

Combine Ingredients
In the same skillet, add the remaining tablespoon of vegetable oil over medium-high heat. Once hot, add the cooked potatoes and shredded corned beef. Stir to combine and spread evenly across the skillet.

Cook the Hash
Cook for about 5-7 minutes without stirring, allowing the bottom to get crispy. Then stir, and press down with a spatula to compact the hash. Cook for another 5-7 minutes until crispy and browned.

Add Caramelized Onions
Fold the caramelized onions into the hash and mix well. Season with salt and black pepper to taste.

Prepare the Toast
Toast the slices of bread until golden brown.

Serve the corned beef hash on a plate, topped with the cooked eggs and alongside the toast.
