    Chop Vegetables

    Dice the onion and chop the mushrooms. Roughly chop the spinach and dice the Roma tomatoes.

    Prepare Olives

    Slice the Kalamata olives in half.

Cooking

    Heat Oil

    In a large skillet, heat the olive oil over medium heat.

    Sauté Onions and Mushrooms

    Add the diced onion and mushrooms to the skillet. Sauté for about 5 minutes until the onions are translucent and the mushrooms are tender.

    Add Spinach and Tomatoes

    Stir in the chopped spinach and diced Roma tomatoes. Cook for an additional 2-3 minutes until the spinach is wilted.

    Beat Eggs

    In a bowl, beat the eggs with salt and black pepper.

    Combine Eggs with Vegetables

    Pour the beaten eggs into the skillet with the sautéed vegetables. Stir gently to combine and cook for about 3-4 minutes until the eggs are just set.

    Add Feta and Olives

    Sprinkle feta cheese and Kalamata olives over the scramble. Cook for another minute until the cheese is slightly melted.

Serving

    Plate the Dish

    Remove from heat and serve the Greek scramble immediately, garnished with extra feta or olives if desired.
