    Chop the Vegetables

    Finely chop the onion, slice the mushrooms, and dice the Roma tomatoes. Set aside.

    Prepare the Spinach

    Rinse the spinach leaves under cold water, then pat them dry with a paper towel. Roughly chop and set aside.

    Prepare the Olives

    Slice the Kalamata olives in half and set aside.

Cooking

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Then add the mushrooms and cook for another 2-3 minutes until softened.

    Add Spinach

    Stir in the chopped spinach and cook until wilted, about 2 minutes. Season with salt and black pepper.

    Prepare the Eggs

    In a bowl, crack the eggs and whisk them until well combined. Pour the eggs into the skillet with the sautéed vegetables.

    Cook the Scramble

    Gently stir the eggs with the vegetables, allowing them to cook evenly. Cook for about 3-5 minutes until the eggs are fully set.

    Add Cheese and Olives

    Once the eggs are cooked, sprinkle the feta cheese and Kalamata olives over the scramble. Gently fold them into the mixture and cook for an additional minute to heat through.

Serving

    Plate the Dish

    Serve the Greek scramble warm on plates, garnished with additional feta cheese or olives if desired.
