Method

Prepare the Seafood and Vegetables

    Prepare Shrimp and Calamari

    Ensure the shrimp are peeled and deveined. Clean the calamari and cut it into rings. Pat both dry with paper towels.

    Prepare Vegetables

    Slice the zucchini into rings, cut the red bell pepper into strips, and julienne the carrot. Set aside.

Make the Batter

    Combine Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

    Add Cold Water

    Gradually add the cold water to the dry mixture, whisking until the batter is smooth and somewhat thick.

Prepare the Spicy Aioli

    Mix Aioli Ingredients

    In a separate bowl, combine mayonnaise, minced garlic, Sriracha sauce, lemon juice, and salt. Mix well and set aside.

Fry the Seafood and Vegetables

    Heat Oil

    In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Batter and Fry

    Dip the shrimp, calamari, and vegetables into the batter, allowing excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding.

    Cook Until Golden

    Fry for about 2-3 minutes, or until golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.

Serve

    Arrange the fried shrimp, calamari, and vegetables on a serving platter. Serve with spicy aioli and lemon wedges on the side.
