Crepe Preparation

    Make the Batter

    In a mixing bowl, combine the all-purpose flour, milk, eggs, melted unsalted butter, vanilla extract, and salt. Whisk until the batter is smooth and well combined. Let the batter rest for at least 30 minutes.

    Cook the Crepes

    Heat a non-stick skillet over medium heat. Lightly grease the skillet with butter. Pour about 1/4 cup of batter into the skillet and quickly swirl to coat the bottom. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another minute. Repeat with remaining batter, storing crepes on a plate.

    Prepare the Berries

    Wash and slice the strawberries. In a bowl, combine the sliced strawberries, blueberries, and raspberries. Gently toss them together.

    Assemble the Crepes

    Take a cooked crepe, add a generous spoonful of the mixed berry filling in the center, and fold the crepe over the filling. Repeat with the remaining crepes.

    Plate the filled crepes and dust with powdered sugar. Top each crepe with a dollop of whipped cream and additional fresh berries. Enjoy your fresh mixed berry crepes!
