Method
Potato Preparation
- 1
Wash and Peel Potatoes
Thoroughly wash the Russet potatoes under cold running water. Once clean, peel the skins off using a vegetable peeler.
- 2
Cut Potatoes
Cut the peeled potatoes into even strips, about 1/4 inch thick, to ensure they cook evenly.
- 3
Soak Potatoes
Place the cut potatoes in a large bowl, cover with 4 cups of water, and add 1 teaspoon of salt. Allow them to soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.
Frying
- 4
Heat Oil
In a deep fryer or a large heavy-bottomed pot, heat 4 cups of vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
- 5
Dry Potatoes
After soaking, drain the potatoes and pat them dry thoroughly with paper towels. This step is crucial to prevent oil splatter.
- 6
Fry Potatoes (First Fry)
Carefully add a handful of dried potato strips to the hot oil. Fry for about 4-5 minutes until they are pale and soft but not browned. Remove and drain on paper towels.
- 7
Cool and Prepare for Second Fry
Let the fries cool for at least 20 minutes. This step helps to achieve the ideal texture.
- 8
Fry Potatoes (Second Fry)
Reheat the oil to 375°F (190°C). Add the cooled fries back into the hot oil in batches. Fry for an additional 2-3 minutes or until golden brown and crispy.
- 9
Drain and Season
Remove the fries from the oil and drain them on fresh paper towels. Immediately season with salt to taste while they are hot.
