    In a medium saucepan, heat the olive oil over medium heat. Add the fresh spinach and sauté for about 2-3 minutes until wilted. Remove from heat and set aside.

    While the spinach is cooking, chop the Roma tomatoes into small pieces. Set aside.

    Beat the Eggs

    In a mixing bowl, crack the eggs and beat them with salt and black pepper until fully combined.

    In the same saucepan used for the spinach, add the beaten eggs over medium-low heat. Stir gently with a spatula, ensuring the eggs are evenly cooked.

    Add Cream Cheese

    As the eggs begin to set, add the cream cheese in small chunks, stirring gently to incorporate it into the eggs.

    Finish with Spinach and Tomatoes

    Once the eggs are almost fully cooked, gently fold in the wilted spinach and chopped Roma tomatoes. Cook for an additional 1-2 minutes until everything is heated through.
