    Prepare the Vegetables

    Wash the fresh spinach thoroughly under cold water, then drain and chop into bite-sized pieces. Dice the Roma tomatoes and set aside.

    Prepare the Cream Cheese

    Soften the cream cheese by leaving it out at room temperature for about 15 minutes or microwave for 10-15 seconds until slightly softened, making it easier to mix.

    Sauté the Spinach

    In a large skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilted.

    Add the Tomatoes

    Stir in the diced Roma tomatoes and cook for an additional 2 minutes until the tomatoes are warmed through.

    Mix the Eggs

    In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

    Combine Ingredients

    Pour the egg mixture into the skillet with the spinach and tomatoes. Let it cook undisturbed for about 1-2 minutes until the edges start to set.

    Add Cream Cheese

    Dollop the softened cream cheese over the top of the eggs, then gently stir to incorporate as the eggs continue to cook.

    Finish Cooking

    Continue to cook, gently stirring occasionally, until the eggs are fully set but still soft, about 3-4 minutes.
