    Marinate the Lamb

    In a small bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Rub this mixture all over the leg of lamb, ensuring it is evenly coated. Cover and let it marinate in the refrigerator for at least 4 hours or overnight for best results.

    Prepare the Grill

    Soak wood chips in water for at least 30 minutes before grilling. Prepare a charcoal grill by lighting the charcoal briquettes and allowing them to burn until they are covered in white ash. Once ready, create a two-zone fire by placing the coals on one side of the grill.

    Add Wood Chips

    Drain the soaked wood chips and sprinkle them over the hot coals. Close the grill lid to allow the smoke to build up.

    Grill the Lamb

    Place the marinated leg of lamb on the cooler side of the grill (indirect heat). Cover the grill and let the lamb cook for approximately 1.5 to 2 hours, or until the internal temperature reaches 135°F for medium-rare, checking periodically.

    Sear the Lamb

    Once the lamb reaches the desired internal temperature, move it to the hotter side of the grill for around 5-7 minutes to sear the outside and create a crispy crust. Turn occasionally to achieve even browning.

    Rest and Serve

    Remove the lamb from the grill and cover it with aluminum foil. Let it rest for about 15-20 minutes before slicing. Serve with your favorite sides.
