Preparation of Shrimp

    Marinate the Shrimp

    In a large bowl, combine the olive oil, minced garlic, lemon juice, paprika, cayenne pepper, salt, and black pepper. Add the peeled and deveined shrimp and toss to coat evenly. Allow the shrimp to marinate for at least 30 minutes at room temperature.

    Prepare the Grill

    If using wood chips for smoking, soak them in water for 30 minutes. Preheat your grill to high heat. If you're using a charcoal grill, add the soaked wood chips directly onto the coals. For a gas grill, place the wood chips in a smoker box or wrap them in aluminum foil and poke holes to allow smoke to escape.

    Grill the Shrimp

    Skewer the marinated shrimp on metal or soaked wooden skewers. Place the skewers on the hot grill and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.

    Garnish and Serve

    Remove the shrimp from the grill and transfer to a serving platter. Sprinkle with chopped fresh parsley for garnish and serve immediately with lemon wedges on the side.
