Method

Preparation

  1. 1

    Prepare the Marinade

In a bowl, combine the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and lemon juice. Mix well.

  2. 2

    Marinate the Beef

Place the beef tenderloin in a large resealable plastic bag or a shallow dish. Pour the marinade over the beef, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

Cooking

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat, around 400°F (200°C).

  2. 4

    Grill the Beef Tenderloin

Remove the beef from the marinade and let it come to room temperature (about 30 minutes). Place the beef on the grill and cook for about 5-7 minutes on each side, depending on your desired doneness (internal temperature of 130°F for medium-rare).

  3. 5

    Prepare the Vegetables

While the beef is grilling, toss the asparagus and cherry tomatoes with olive oil and salt. Place them on the grill during the last 5-7 minutes of cooking the beef, turning occasionally until tender.

  4. 6

    Rest the Meat

Once cooked, remove the beef from the grill and let it rest for about 10 minutes before slicing.

Serving

  1. 7

    Slice and Serve

Slice the beef tenderloin into medallions and serve alongside the grilled asparagus and cherry tomatoes.
