Beef Tenderloin

Grilled Vegetables

Method

Preparing the Compound Butter

  1. 1

    Make Smoked Mushroom Compound Butter

In a medium bowl, combine the unsalted butter, smoked mushrooms, minced garlic, chopped parsley, and lemon juice. Mix until well combined. Shape the mixture into a log using plastic wrap and refrigerate until firm.

Cooking the Beef Tenderloin

  1. 2

    Season and Sear the Beef

Season the beef tenderloin with salt and black pepper on all sides. Heat olive oil in a skillet over medium-high heat. Sear the tenderloin for 3-4 minutes on each side until a brown crust forms. For medium-rare, cook until the internal temperature reaches 135°F (57°C).

  2. 3

    Rest the Beef

Remove the tenderloin from the skillet and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.

Grilling the Vegetables

  1. 4

    Prepare and Grill Vegetables

In a bowl, toss the sliced bell pepper, zucchini, and red onion with olive oil, salt, and black pepper. Preheat a grill to medium-high heat and grill the vegetables for about 5-7 minutes, or until they are tender and have grill marks.

Making Mashed Potatoes or Rice

  1. 5

    Prepare Mashed Potatoes

Peel and chop the potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot. Add butter, milk, and additional salt to taste. Mash until smooth.

  2. 6

    Prepare Rice (Alternative)

Rinse the rice under cold water. In a saucepan, bring water to a boil, add the rinsed rice, and reduce to a simmer. Cover and cook for 15-20 minutes until the rice is tender and water is absorbed.
