Preparing the Compound Butter

    Make the Compound Butter

    In a medium bowl, combine the softened unsalted butter, smoked mushrooms, chopped parsley, minced garlic, salt, and black pepper. Mix until well combined. Transfer the mixture to parchment paper, shape it into a log, and roll it tightly. Refrigerate until firm.

Cooking the Beef Tenderloin

    Sear the Tenderloin

    Preheat a skillet over medium-high heat. Season the filet of beef tenderloin with salt and black pepper on both sides. Add a bit of oil to the skillet. Once hot, sear the tenderloin for about 4-5 minutes on each side for medium-rare. Remove from heat and let it rest.

Grilling the Vegetables

    Grill the Vegetables

    In a bowl, toss the sliced bell peppers, zucchini, and red onion with olive oil, salt, and black pepper. Preheat the grill to medium heat. Grill the vegetables for about 5-7 minutes or until tender and slightly charred, turning occasionally.

Making Mashed Potatoes or Cooking Rice

    Prepare Mashed Potatoes

    In a large pot, bring water to a boil and add the peeled and cubed potatoes. Cook until tender, about 15-20 minutes. Drain and return to the pot. Add milk, butter, and salt. Mash until smooth and creamy.

    In a saucepan, combine 1 cup of rice and 2 cups of water. Bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and water is absorbed. Fluff with a fork.

    Slice the rested beef tenderloin and place it on a plate. Top with a slice of the smoked mushroom compound butter. Serve alongside grilled vegetables and your choice of mashed potatoes or rice.
