Preparation

    Season the Steak

    Take the 9 oz filet mignon and pat it dry with paper towels. Season both sides generously with salt and black pepper.

    Prepare the Pan

    In a large skillet, heat the olive oil over medium-high heat until it shimmers.

Cooking

    Sear the Steak

    Once the oil is hot, add the filet mignon to the pan. Sear for 3-4 minutes on one side until a crust forms.

    Flip the Steak

    Using tongs, flip the steak over and add the butter, garlic cloves (smashed), and thyme to the pan.

    Baste the Steak

    Cook for an additional 3-4 minutes while continuously spooning the melted butter over the steak to baste it.

    Check for Doneness

    Use a meat thermometer to check the internal temperature. Aim for 130°F for medium-rare.

Resting

    Let it Rest

    Once cooked to your desired doneness, remove the filet mignon from the pan and let it rest on a cutting board for 5-10 minutes before slicing.
