Method
Prepare Pasta
- 1
Cook Fettuccine
In a large pot, bring water to a boil. Add 1 tablespoon of salt and the fettuccine. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
Cook Chicken
- 2
Season and Cook Chicken
Season chicken breasts with salt and black pepper. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 7-8 minutes on each side, or until fully cooked and golden brown. Remove from skillet and let rest before slicing.
Make Sauce
- 3
Prepare Alfredo Sauce
In the same skillet used for the chicken, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Pour in the white wine and let it simmer for 2-3 minutes until reduced by half. Stir in the heavy cream and bring to a gentle simmer. Cook for another 3-4 minutes until the sauce thickens slightly.
- 4
Add Cheese
Remove the skillet from heat and whisk in the grated Parmesan cheese until melted and smooth. Season the sauce with additional salt and black pepper to taste.
Combine and Serve
- 5
Combine Pasta and Sauce
Add the cooked fettuccine to the skillet with the Alfredo sauce. Toss to combine and ensure the pasta is well coated.
- 6
Slice Chicken and Serve
Slice the cooked chicken and place it on top of the fettuccine Alfredo. Garnish with chopped parsley and additional Parmesan cheese if desired. Serve immediately.
