Preparing the Steak

    Season the Steak

    Pat the sirloin steak dry with paper towels. Rub the steak with olive oil, then season generously with salt and black pepper on both sides.

    Cook the Steak

    Heat a grill pan or skillet over medium-high heat. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Remove from heat and let rest for about 5 minutes before slicing.

Making the Green Peppercorn Sauce

    Sauté Shallots and Garlic

    In the same pan used for the steak, lower the heat to medium. Add the unsalted butter and let it melt. Add the finely chopped shallots and minced garlic, sautéing until softened, about 2-3 minutes.

    Add Green Peppercorns and Broth

    Stir in the green peppercorns and cook for another minute. Then add the beef broth, scraping the bottom of the pan to release any browned bits. Let it simmer for about 5 minutes until slightly reduced.

    Finish with Cream

    Reduce the heat to low and add the heavy cream. Stir and let it simmer gently for another 3-4 minutes until the sauce thickens slightly. Season with salt and black pepper to taste.

    Serve

    Slice the rested steak against the grain and arrange on a plate. Drizzle the green peppercorn sauce over the steak and garnish with chopped parsley before serving.
