Preparation of Dressing

Make the Spicy Thousand Island Dressing
In a bowl, combine mayonnaise, ketchup, horseradish, paprika, salt, and black pepper. Mix well until smooth. Adjust seasoning to taste. Set aside.
Assembling the Sandwich

Layer the Ingredients
Take two slices of pumpernickel bread and spread a generous amount of the spicy Thousand Island dressing on one side of each slice.

Add Corned Beef
Layer the corned beef evenly over one slice of bread, right on top of the dressing.

Add Sauerkraut
Spread the sauerkraut evenly over the corned beef.

Add Swiss Cheese
Place the Swiss cheese slices on top of the sauerkraut.

Complete Sandwich
Top with the second slice of pumpernickel bread, dressing side down.

Serve the Sandwich
Once cooked, remove the sandwich from the skillet, cut it in half, and serve it hot with extra Thousand Island dressing on the side if desired.
