Method

Preparation of Dressing

  1. 1

Make the Spicy Thousand Island Dressing

In a bowl, combine mayonnaise, ketchup, horseradish, paprika, salt, and black pepper. Mix well until smooth. Adjust seasoning to taste. Set aside.

Assembling the Sandwich

  1. 2

    Layer the Ingredients

Take two slices of pumpernickel bread and spread a generous amount of the spicy Thousand Island dressing on one side of each slice.

  2. 3

    Add Corned Beef

Layer the corned beef evenly over one slice of bread, right on top of the dressing.

  3. 4

    Add Sauerkraut

Spread the sauerkraut evenly over the corned beef.

  4. 5

    Add Swiss Cheese

Place the Swiss cheese slices on top of the sauerkraut.

  5. 6

    Complete Sandwich

Top with the second slice of pumpernickel bread, dressing side down.

Cooking

  1. 7

    Grill the Sandwich

Preheat a skillet or griddle over medium heat. Place the assembled sandwich in the skillet and grill for 3-4 minutes on one side until golden brown. Flip and grill the other side for another 3-4 minutes until the cheese is melted and the bread is crispy.

Serving

  1. 8

    Serve the Sandwich

Once cooked, remove the sandwich from the skillet, cut it in half, and serve it hot with extra Thousand Island dressing on the side if desired.
