Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). This ensures that the cake cooks evenly.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the semi-sweet chocolate and unsalted butter. Melt them together using a double boiler or microwave in short bursts, stirring until smooth.

  3. 3

    Mix Dry Ingredients

In a separate bowl, whisk together the powdered sugar, all-purpose flour, and a pinch of salt until well combined.

  4. 4

    Combine Mixtures

Once the chocolate and butter mixture has cooled slightly, add in the eggs, egg yolks, and vanilla extract. Stir to combine. Gradually fold in the dry mixture until just combined; do not overmix.

  5. 5

    Prepare Ramekins

Grease four ramekins with butter and dust with cocoa powder to prevent sticking. This will help the cakes release easily after baking.

  6. 6

    Fill Ramekins

Pour the chocolate batter evenly into the prepared ramekins, filling each about 3/4 full.

  7. 7

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should still be soft.

  8. 8

    Let Cool

Remove the ramekins from the oven and let them cool for 1 minute before inverting onto plates.

Serving Instructions

  1. 9

    Serve

Carefully invert each ramekin onto a plate to release the lava cakes. Serve immediately with a scoop of vanilla ice cream and a handful of fresh berries on the side.
