Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Season the chicken breasts with olive oil, salt, and pepper. Grill the chicken for 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes before slicing.

Cook the Tortellini
In a large pot of boiling salted water, cook the tortellini according to the package instructions until al dente. Drain and set aside.
Cooking the Sauce

Sauté Garlic and Spinach
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add fresh spinach and cook until wilted, about 2-3 minutes.

Add Tomatoes and Cream
Stir in the fire-roasted tomatoes (with their juices) and heavy cream. Bring to a simmer and let cook for 5 minutes, stirring occasionally.

Incorporate Pesto
Add the pesto sauce to the skillet, stirring well to combine. Let cook for an additional 2-3 minutes.

Combine Chicken and Tortellini
Add the cooked tortellini and sliced grilled chicken to the skillet with the sauce. Toss gently to coat everything evenly in the pesto cream sauce.
