Preparation

    Prepare the Chicken

    Season the chicken breasts with salt, black pepper, and half of the olive oil. Let them marinate for at least 15 minutes.

    Prepare the Mushrooms

    Clean the mushrooms with a damp cloth and slice them thinly.

    Mince the Garlic

    Peel and mince the garlic cloves finely.

    Prepare the Thyme

    If using fresh thyme, remove the leaves from the stems and chop them finely.

Cooking

    Sauté the Mushrooms

    In a large skillet, heat the remaining olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the sliced mushrooms and fresh thyme. Cook for about 5-7 minutes until the mushrooms are golden brown and tender. Remove from heat and set aside.

    Cook the Chicken

    In the same skillet, add the marinated chicken breasts. Cook over medium-high heat for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

    Add the Cheese

    Once the chicken is cooked through, lower the heat and place the sautéed mushrooms evenly on top of each chicken breast. Slice the smoked mozzarella cheese and place a slice on each chicken breast. Cover the skillet with a lid and allow the cheese to melt for about 2-3 minutes.

    Serve

    Remove the skillet from heat. Serve the chicken topped with melted smoked mozzarella and mushrooms, garnished with additional thyme if desired.
