Cheese Making Process

    Prepare the Milk

    Pour the whole milk into a large pot and slowly heat it over medium heat until it reaches 190°F (88°C). Stir occasionally to prevent scorching.

    Add Vinegar

    Once the milk has reached the desired temperature, remove it from the heat and slowly add the white vinegar while stirring gently. You should see the milk curdling as the curds and whey separate.

    Let It Sit

    Cover the pot with a lid and let it sit for about 10-15 minutes. This allows the curds to firm up.

    Strain the Curds

    Line a colander with cheesecloth and place it over a large bowl. Carefully pour the curds and whey into the colander, allowing the whey to drain away. Rinse the curds under cool water to remove excess vinegar.

    Season the Curds

    Transfer the drained curds to a mixing bowl. Sprinkle in salt, and if desired, add rennet for a firmer cheese. Mix well using your hands or a spatula.

    Flavor the Cheese

    If you want to add flavor, mix in your choice of herbs, garlic powder, and chili flakes to the curds. Adjust the seasoning to your taste.

    Mold the Cheese

    Transfer the seasoned curds into a cheese mold or a small container lined with cheesecloth. Press down firmly to shape the cheese and remove excess whey.

    Chill and Set

    Refrigerate the cheese for at least 2 hours to firm up. Once set, remove it from the mold and slice or crumble it as desired.
