Method

Preparation

  1. 1

    Prepare the Marinade

In a medium mixing bowl, combine olive oil, fresh lemon juice, minced garlic, chopped parsley, dried oregano, salt, and black pepper. Whisk the ingredients together until well combined.

  2. 2

    Marinate the Swordfish

Place the center cut swordfish steaks in a large resealable plastic bag or a shallow dish. Pour the marinade over the swordfish, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

Cooking

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F to 450°F). If using a grill pan, heat it over medium-high heat on the stove.

  2. 4

    Grill the Swordfish

Remove the swordfish from the marinade and discard the marinade. Place the swordfish steaks on the hot grill. Cook for about 4-5 minutes on each side, or until the fish is cooked through and has nice grill marks. The internal temperature should reach 145°F.

Serving

  1. 5

    Plate the Swordfish

Once the swordfish is done cooking, remove it from the grill and let it rest for a couple of minutes. Serve each steak garnished with lemon wedges and a sprinkle of fresh chopped parsley.
