Prepare Burger Patties

Mix the Beef
In a large bowl, combine the ground beef, Cajun seasoning, salt, and black pepper. Mix gently with your hands until just combined. Avoid overmixing to keep the patties tender.

Form Patties
Divide the mixture into four equal portions and shape each portion into a patty about 3/4 inch thick. Make a small indentation in the center of each patty to prevent puffing during cooking.

Sauté Vegetables
Chop the onion, mushrooms, and bell pepper into small pieces. Heat a skillet over medium heat with a tablespoon of oil. Add the onions and sauté for 2-3 minutes until translucent. Add the mushrooms and bell pepper, and continue to sauté for another 5-7 minutes, until the vegetables are tender. Set aside.
Cook the Burgers

Grill or Pan-Fry
Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on one side. Flip the patties and top with equal parts mozzarella and cheddar cheese. Cook for an additional 4-5 minutes or until the internal temperature reaches 160°F (71°C) and the cheese is melted.

Build the Burger
Toast the burger buns if desired. On the bottom half of each bun, layer lettuce, the cooked burger patty with melted cheese, sautéed vegetables, and sliced tomato. Top with the other half of the bun.
