    Chop the Vegetables

    Dice the bell pepper, onion, and celery into small pieces. Mince the garlic cloves and slice the green onions.

    Prepare the Chicken

    Trim any excess fat from the chicken thighs and cut them into bite-sized pieces.

    Slice the Sausage

    Cut the Andouille sausage into half-moon shapes.

    Sauté the Sausage

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5-7 minutes.

    Add the chicken thighs to the pot and sprinkle with Cajun seasoning, black pepper, and salt. Stir and cook until the chicken is browned and cooked through, about 8-10 minutes.
