Preparation

    Cook the Bacon

    In a large skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove the bacon from the skillet and place it on a paper towel to drain excess grease.

    Scramble the Eggs

    In a bowl, crack the eggs and whisk them together. In the same skillet over medium heat, add the scrambled eggs. Cook, stirring occasionally, until the eggs are fully set and fluffy, about 3-4 minutes.

    Prepare the Avocado

    While the eggs are cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and season with salt and pepper to taste.

    Warm the Tortillas

    In a dry skillet, warm the flour tortillas over medium heat for about 30 seconds on each side until soft and pliable.

    Assemble the Burrito

    To assemble, lay a warm tortilla flat and spoon a portion of scrambled eggs onto the center. Crumble the cooked bacon over the eggs, then sprinkle cheddar cheese on top. Add a scoop of mashed avocado and a generous spoonful of salsa.

    Roll the Burrito

    Fold the sides of the tortilla inwards and then roll it from the bottom up to enclose the filling. Repeat with the second tortilla.

    Serve

    Slice the burritos in half and serve immediately, optionally with extra salsa on the side.
