Preparation

    Prepare the Onions

    Slice the medium onion into rings. Heat the olive oil in a skillet over medium heat. Add the onion rings and sprinkle with a pinch of salt. Cook, stirring occasionally, until the onions are soft and caramelized, about 10-15 minutes.

    Prepare the Beef Patties

    In a bowl, combine the ground beef, salt, and black pepper. Mix gently until just combined. Divide the mixture into two equal portions and shape them into burger patties.

    Prepare the Tomato and Lettuce

    While the onions are cooking, wash the lettuce leaves and slice the tomato into thick slices.

Cooking

    Cook the Burgers

    Heat a grill or grill pan over medium-high heat. Place the burger patties on the grill and cook for about 4-5 minutes on one side. Flip the patties and place an ounce of Amish bleu cheese on top of each burger. Cook for an additional 4-5 minutes or until the burgers are cooked to your desired doneness.

    Toast the Buns

    During the last minute of cooking, place the burger buns cut side down on the grill to toast them lightly.

Assembly

    Assemble the Burger

    Once the burgers are cooked, place each patty on the bottom half of a toasted bun. Top with the fire-roasted onions, lettuce leaves, and tomato slices. Cover with the top half of the bun.
