Burger Preparation

Prepare the Beef Patties
In a bowl, combine the ground beef, salt, and black pepper. Mix gently until just combined. Divide into two equal portions and shape into patties, about ¾ inch thick.

Grill the Patties
Preheat your woodfire grill to medium-high heat. Place the beef patties on the grill and cook for about 4-5 minutes on one side. Flip the patties and place equal amounts of Maytag bleu cheese on top of each patty. Grill for another 4-5 minutes until the cheese is melted and the patties reach your desired doneness.

Toast the Buns
During the last minute of grilling, place the burger buns cut-side down on the grill to toast lightly.

Slice the Onion
Peel and slice the onion into thin rings.

Assemble the Burger
Place the grilled beef patty with melted bleu cheese on the bottom half of the toasted bun. Top with the grilled onions and cover with the top half of the bun. Serve immediately.
