Combine dry ingredients
In a large bowl, whisk together the flour, baking powder, and salt.

Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to mix until it resembles coarse crumbs.

Pour in the milk and mix just until combined. Do not overmix.

Turn the dough onto a floured surface and gently pat it into a 1-inch thick rectangle. Cut out biscuits using a round cutter.

In a large skillet over medium heat, cook the breakfast sausage until browned, breaking it into small pieces.

Gradually whisk in the milk, ensuring there are no lumps. Cook until the gravy thickens, about 5 minutes.
