Preparation of Beef Tenderloin

    Prepare the Beef

    Preheat your oven to 400°F (200°C). Trim any excess fat or silver skin from the beef tenderloin. Pat it dry with paper towels.

    Season the Beef

    Rub the beef tenderloin with olive oil, ensuring it is evenly coated. Season generously with salt and black pepper.

    Add Aromatics

    Mince the garlic cloves and chop the fresh rosemary. Sprinkle them over the beef tenderloin, pressing them into the meat.

    Sear the Beef

    In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the beef tenderloin and sear on all sides until browned, about 2-3 minutes per side.

    Roast in the Oven

    Transfer the skillet with the seared beef to the preheated oven and roast for about 20-25 minutes for medium-rare, or until it reaches your desired doneness. Use a meat thermometer for accuracy (130°F (54°C) for medium-rare).

    While the beef is roasting, wash the asparagus and trim the tough ends. Toss with olive oil, salt, and place on a baking sheet.

    Wash the baby potatoes and cut them in halves or quarters. Toss them with olive oil, salt, and place them on the same baking sheet as the asparagus.

    Place the baking sheet in the oven during the last 15 minutes of the beef cooking time. Roast until tender and lightly browned.
