Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare the Beef

Remove the beef tenderloin from the refrigerator and let it sit at room temperature for about 30 minutes.

  3. 3

    Season the Meat

Rub the beef tenderloin with olive oil, then season it generously with salt, black pepper, garlic powder, and chopped rosemary.

Cooking

  1. 4

    Sear the Beef

In a large skillet, heat a bit of olive oil over medium-high heat. Once hot, sear the beef tenderloin on all sides until browned, approximately 3-4 minutes per side.

  2. 5

    Roast in the Oven

Transfer the seared beef tenderloin to a roasting pan and place it in the preheated oven. Roast for about 20-25 minutes for medium-rare (internal temperature of 130°F/54°C).

  3. 6

    Rest the Meat

Remove the beef from the oven and cover it loosely with aluminum foil. Let it rest for about 10-15 minutes before slicing.

Optional Sauce

  1. 7

    Make Red Wine Sauce

While the beef is resting, you can prepare a simple red wine sauce. In the same skillet used for searing, add 1 cup of red wine and bring to a boil. Reduce heat to a simmer and let it reduce by half, then whisk in 2 tablespoons of butter until melted and smooth.
