Tartare Preparation

Prepare the Ahi Tuna
Dice the Ahi tuna into small cubes, ensuring that it is freshly sourced and sushi-grade.

Prepare the Avocado
Cut the ripe avocado in half, remove the pit, and scoop out the flesh. Dice it into small cubes.

Mix the Tartare
In a mixing bowl, gently combine the diced Ahi tuna, avocado, and cucumber. Add the ginger ponzu sauce and yuzu juice, and mix carefully to avoid mashing the avocado. Taste and adjust seasoning if necessary.

Sprinkle sesame seeds over the mixture and gently fold them in.
Crispy Wonton Chips Preparation

Prepare the Wonton Wrappers
Cut the wonton wrappers into triangles or strips, depending on your preference for chip shape.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Wonton Chips
Carefully add the wonton pieces to the hot oil in batches. Fry them until they are golden brown and crispy, about 1-2 minutes. Use a slotted spoon to transfer the chips to a paper towel-lined plate to drain excess oil.
