Cake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour two 6-inch round cake pans.

    Mix Dry Ingredients

    In a mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, beat the large eggs, vegetable oil, and vanilla extract together until smooth.

    Add Carrots

    Fold in the grated carrots into the wet mixture until evenly distributed.

    Combine Mixtures

    Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.

    Bake the Layers

    Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Frosting Preparation

    Prepare the Frosting

    In a mixing bowl, beat the cream cheese and unsalted butter together until creamy and smooth.

    Add Sugar and Vanilla

    Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.

Assembling the Cake

    Layer the Cake

    Once the cake layers are completely cool, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top.

    Repeat Layers

    Add the second layer on top of the frosting, and repeat the process until all layers are stacked with frosting in between.

    Frost the Outside

    Use the remaining frosting to cover the top and sides of the cake.

    Garnish

    Sprinkle chopped walnuts on top of the cake and add carrot shavings for decoration as desired.
