Mix the Ingredients
In a large mixing bowl, combine the Tillamook sharp cheddar cheese, cream cheese, finely chopped jalapeño, chopped pimento, harissa paste, chopped green onions, chopped black olives, mayonnaise, salt, and black pepper.

Form the Cheese Ball
Using a spatula or your hands, mix all the ingredients together until well combined. Then, shape the mixture into a round ball.

Chill
Wrap the cheese ball in plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
Serving Preparation

Prepare the Lettuce and Tortillas
While the cheese ball is chilling, wash the lettuce leaves and pat them dry. Warm the tortillas slightly in a skillet or microwave.

Serve
Once the cheese ball is chilled, unwrap it and place it on a serving platter. Arrange the lettuce leaves around it, and serve with warm tortillas and pico de gallo on the side.
