Prepare the Chicken Wings
Rinse the chicken wings under cold water and pat them dry with paper towels. This helps to remove excess moisture for a crispier texture.

Season the Wings
In a large bowl, combine the salt, black pepper, garlic powder, and baking powder. Add the chicken wings to the bowl and toss until they are evenly coated with the seasoning mixture.
Frying

Heat the Oil
In a large, deep pot or a deep fryer, heat the vegetable oil to 375°F (190°C). Use a thermometer for accuracy.

Fry the Wings
Carefully add the seasoned chicken wings to the hot oil in batches, ensuring not to overcrowd the pot. Fry them for about 10-12 minutes, or until they turn golden brown and are cooked through (internal temperature should reach 165°F or 74°C).

Using a slotted spoon, remove the chicken wings from the oil and place them on a plate lined with paper towels to drain excess oil.

Toss the wings in your choice of homemade sauce or serve them plain. Offer buffalo sauce, ranch dressing, or blue cheese dressing as dipping options.
