    Prepare the Tortillas

    Cut each corn tortilla into six equal triangles.

    Heat the Oil

    In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add the tortilla triangles in batches to the hot oil, frying until golden and crispy, about 2-3 minutes per batch.

    Drain the Chips

    Use a slotted spoon to remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. Season with salt while still warm.

For the Sausage Queso

    Cook the Sausage

    In a large saucepan over medium heat, add the ground sausage. Cook until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes.

    Add Cream Cheese

    Reduce heat to low and add the cream cheese to the pan, stirring until melted and combined with the sausage.

    Add Cheeses and Tomatoes

    Stir in the shredded cheddar cheese, Monterey Jack cheese, and diced tomatoes with green chilies. Mix until all the cheese is melted and the sauce is smooth.

    Adjust Consistency

    Pour in the milk and stir to reach your desired queso consistency. If the queso is too thick, add more milk as needed.

    Season the Queso

    Add garlic powder, onion powder, salt, and black pepper to taste, stirring well to combine.

    Remove from heat and serve the sausage queso warm with the tortilla chips.
